Recipe:

4 medium pears (ripe-if possible and cored)

1 cup fresh or frozen cranberries (thawed)

1/3 cup Monk Fruit Sweetener, Rapadura, or Sucanat sugar (pure Maple Syrup can also be used)

3/4 cup fresh squeezed orange juice

1 tsp. orange or lemon zest

1-2 Tbsp. butter

INSTRUCTIONS:

Preheat oven to 350 degrees. Place the cored pears into a greased glass baking dish and stuff the cores with the cranberries. Mix the rest of the ingredients (except for the butter) together and pour equal amounts into each cored cranberry stuffed pear. Top each pear with a spoon of butter. Bake for 25-30 minutes or until pears are tender.

*For an extra treat, top with a dollop of freshly whipped cream before indulging!
