Mango Lassi Recipe (Dairy Free)
RECIPE (Yields about 1 ½- 2 cups)
¾ full fat coconut milk (Native Forest is my favorite-pure and BPA free can)
*If you are not dairy sensitive , you may substitute the coconut milk for ¾ cup plain yogurt or ¾ cup of another dairy or nut milk
1 ½ cup fresh or frozen mango chunks (frozen will make this thicker and milk shake like consistency)
1 tsp. pure vanilla extract
2 TBSP. soaked (soak in water for 1 hour and drain) raw cashews or 1 TBSP. RAW almond butter (if intolerant to cashews)
3 TBSP. Lakanto Monk Fruit Sweetener my favorite sweetener-or 2 TBSP. of pure maple syrup
Monk Fruit Sweetener- this natural sweetener assists with feeding the healthy flora in the GI tract
1/8 tsp. ground cardamom powder
1 TBSP. fresh lime juice
Sprinkle of ground turmeric for extra orange color (if desired)
Place all ingredients in the blender and blend until smoothie like or milk shake like consistency. Serve chilled if using fresh mango, if using frozen mango, then enjoy immediately!
