Fruit and Nut Fudge
RECIPE
1 cup raw organic cacao powder – this is the least processed and has the highest anti-oxidant levels – you can find it at a health food store or on amazon.com
(cocoa powder is fine too)
1 cup chopped walnuts
1 cup unrefined (extra virgin or cold pressed) coconut oil
1 cup raw honey
½ cup organic dried blueberries

INSTRUCTIONS
Melt the coconut oil on low heat until liquid. When melted pour into a mixing bowl and add the other ingredients. Stir well until honey is well incorporated into other ingredients. Pour into a parchment paper lined 9x13 pan. Refrigerate until solid (about an hour). Cut into squares when solid and keep refrigerated.
