Elderflower Ice Cream (Dairy and Refined Sugar Free)
I have so many clients that have dietary restrictions due to food sensitivities/ allergies, or that are on a healing journey and need to be free from dairy, sugar, and other types of congesting foods during their healing and recovery. These dietary restrictions can be difficult, especially when you need to eliminate your favorite foods from your diet for a period of time. Having healthy alternatives like this icecream makes following these types of lifestyle changes much easier and more enjoyable!
We are all born with a sweet tooth and something sweet and refreshing always tastes good. Make this easy, lovely, delicious, and guilt free ice cream in just a few minutes using just 3-4 ingredients.
1 can of full fat organic unsweetneed coconut milk (Native Forest is the one I use and recommend)
2 tsp pure vanilla extract
3 TBSP Lakanto Monk Fruit Sweetener or (3 TBSP of Elderflower honey or other type of floral infused honey is lovely too)
1/2 cup Elderflowers (just the flowers, no green stems)
Place all ingredients in blender just to blend and then place in an ice cube tray to freeze. After frozen, place cubes into a food processor or blender and blend until consistency of soft serve icecream. You can also use an icecream maker.
Garnish with Elderflowers or other edible flowers...Bon Appetit!
