Delicious and Decadent Chocolate Mousse Recipe
I love chocolate and creamy, sweet desserts…how about you? This is a decadent dessert pudding you can feel good about indulging in! It has healthy fats, nutrients, and the rich antioxidant effects of cacao. I love to eat this as is or top with fresh strawberries or blueberries..YUM!!!
RECIPE
1 cup of Medjool dates soaked in 1 cup full fat coconut milk for 6-8 hours
½ cup cacao powder (carob powder is fine to use if you aren’t able to tolerate cocoa or cacao in your diet)
1 cup full fat coconut milk
1 ripe avocado (peeled and pit removed)
2-3 dropperfuls Whole Leaf Stevia Liquid or 1/3 cup pure maple syrup
1 tsp pure Vanilla extract
*I like to soak my dates in the coconut milk overnight so they get soft and gooey. This way, they blend into the pudding mixture better and leave a silky and smoother texture in your finished product. When I add the soaked dates in the blender, I also use the milk they were soaking in.
Place all ingredients in a blender and blend until a thick pudding like consistency. You may add more coconut milk if you need to blend the ingredients thoroughly.
